We have done several backlit panface digital prints with our Versaworks and Roland VP-540 setup. It depends on the image but most of the time it calls for a overprint to be set to 2 (double basically)...then slap on some laminate.

I have had the same issue happen from time to time. I have noticed that the more jobs you have in your queue the more frequently it happens. Try deleting most of your jobs in your queue when you are finished with them. If you queues aren't full of much then I am not sure what may be causing it.
