Have you always connected through a USB hub? Hubs are notoriously bad when it comes to Versaworks. Also, try updating Versaworks to the latest version if it's not already.
I have never used this printer but . . . I am willing to bet that data is saved as a .CSV file somewhere on the hard drive. In the search bar, type in *.CSV. It will show all of the .CSV files on the computer. You might get lucky and it's saved as InkUsage.CSV or something easy like that.
There are papers for solvent printers. Any paper with a coating on it will not work well with solvent. The VJ628 is a good starter machine and the software allows you to adjust pretty much everything about the printer. Most solvent printable paper I have seen does not have a sticky finish to it.
Although it's not my favorite design software, Flexi might be a good option for you. LXI is Flexi essentially so there would be a lower learning curve then illustrator or Corel Draw. If you are just doing stickers, you could get a Mutoh VJ628 (24" solvent printer) which will be cheaper than most...

Is it possible that the internet connection is not being shared with the windows side on parallels? Check the parallels settings to see if there is an option for passing the internet connection through to the windows side.

When switching to service mode nothing different happens at start-up. It just adds the # menus to the regular menu. Double check the menus to see if they have been added. I have never seen a Mimaki that didn't use remote and function to get into service mode but I could be mistaken.

It's probably defective cartridges. There is a little flag on the cartridges that sticks out when the cartridge is empty. If it doesn't, the machine will not switch to the full cartridge. I have seen this happen many times on 3rd party cartridges.
