UPDATE - SOLVED. I don't know how or why, but after a dozen attempts to configure the plotter to "USB" instead of "Cut to File", and having it immediately revert back, the USB option finally took and didn't revert back. After that, it cut perfectly. I appreciate all of the input and help!

My plan now is to run one through the Mimaki FineCut Illustrator plug-in and the other one through Onyx. Maybe Flexi is the best long-term decision, but at this point I'll be happy if I can do it this way, then I'll consider Flexi and other options.
