    Distorting Gradient Fills

    I would try creating the distortion, converting the text to curves, uncompound the letters so they are individual shapes, apply the gradient fill , and adjust the angle for each individual letter.

    What tasks will your new employee be assigned? There are an abundance of Youtube videos for sign production that I feel would be more helpful than a book. If the employee will be doing design, I think the first book should be Mike Steven's "Mastering Layout"...
