Doesn't the Roland printers print Pantone colors? In my experience, if you save a file from Illustrator with Pantone colors specified and send it through Roland's VersaWorks the machine will hit pretty close to the swatch in the Pantone book. Make sure you select a Coated color in Illustrator.
Is the color space of the original file CMYK, and you're pasting into an RGB file? If your color palette is open to CMYK in an RGB document it doesn't mean that the color you're using is CMYK. That situation is showing a translation of the RGB formula in CMYK format.

The group image shows the 50 series, 180 #3 is the remnant roll, and 180 #2 is the new roll of IJ180c we received last week.
You might see in the 180 #2 that the black has white showing through and, if you can notice in the group photo, the yellow is a bit lighter.
