I am trying to get a good to red to black gradient in illustrator and the center where the two meet ends up as an ugly gray, is there a good combination that looks good?

I manage to get good gradients by creating 2 layers of the shape or subject to be filled in.
The bottom layer create a solid black fill. The 2nd layer above create the red gradient fading into a white. Double tap the white colour gradient bar and turn the opacity to 0%. This should eliminate the grey.

I have better luck using RGB for gradients. CMYK always gets muddy in the middle. It might just be Corel's color engine?
