It does that because of the compound curve, the same way windshield lettering turns into a frown unless you adjust it during installation. For this one, I'd install the two words separately and adjust the lower line so it looks straight. This involve partially cutting between the letters and taping it up so it curves to look straight.

Or reduce the height of the reflective chevrons and put the words on the flat part of the tailgate, not the edge.
