Can't change the color!

I'm doing a layout for a directional wedding reception sign. I typed in the "&" symbol and tried to fill it the color I want and it won't do it! I tried clicking a pantone color: nothing. Tried using the ink dropper: nothing. I tried converting it to curves instead of text: nothing. It's showing black on the screen but the fill in the color palette is showing that it's the color I'm clicking. Everything else on the layout is showing correct. What gives?

Just tried typing more text. It won't change either. The text I had typed before changed just fine. New shapes also will.

I'm using Illy CS3.

Turn it off then turn it on again.

I have had this happen before. Select the "&" and void it of all fills and strokes using the "none" feature in the color pallet. NOW try adding color again. If I am remembering correctly, this simple solution fixed my situation and saved the day. Good Luck.

I did. No luck. I thought it might be something with the ink dropper preferences (double click on the tool) because yesterday I added "appearance" to the things to copy. But I changed it back and restarted Illy and still no change.

I'm on a new file now and the same thing! Text - even after converted to curves - will appear black even though the fill color palette shows it's something else! WTF? I have a couple of proofs to send and need to figure this out asap.

You are in View> Preview mode and not Outline mode right?
Sometimes the obvious happens.
