You might be barking up the wrong tree here.

I only have exp with Oce Arizona flat beds. And they don't allow you to use any other inks with their printers. all the bags have RF chips so the printer can read them. It wont even allow you to for example put a cyan ink bag in a magenta port. Which is good so you don't accidentally do it and start to run some jobs and now you've got cyan coming out of the magenta nozzles.

say you can override that. So now your RIP needs to understand that you've got all these greys and black ink channels and no CMY. You'll need some custom drivers so the RIP knows what's up with the printer.
Also your rip needs to be able to understand that type of ink configuration.

I use onyx. there's many ink configurations inside. E.g CMYK, CMY, K, CMYK, CMYKS, CMYKSS, CMYKO, CMYKOVG, and so on. There's no KLKLLKW or KLKLLKS (S is spot colour which is usually white or another configured spot colour)

The primary use of flat beds are for signage and point of sale or large graphics. not for printing fine art photography. Even though some flatbeds have a very good colour gamut,
I know Oce/Canon now have light cyan and light magenta on their latest flat beds. (next time they have one in their show room i'm actually going to go and see how much difference it makes)
I've never had any trouble printing grey scale images. It's all in the profile.
