Possible to make notes on emails in Mac mail?

In my new job, I deal with alot more email than I have in the past, and many of them also have the same subject line, such as "Flag Order" or "Artwork". It would be great if there was a way (in Mac mail) to add another tab up there with "From", "Subject" and "Date Received", that I could add my own notes giving a little more information about what's in the email. I know the orders and I know the names but I have a hard time putting them together so a little note beside the email would be great. Does that make sense? I've searched online and can't seem to find an answer but I may not be searching for the right thing... or maybe it's not possible. It should be!

I know about the "Notes" tab, but those are stored in a separate folder so it doesn't really work the way I would like.

Any ideas?

This may not be the most "technical" solution, but you could simply forward the email to yourself, and then have the ability to change the subject line and more notes in the email body.

you could create separate mailboxes and put them in separate ones. Here is how mine is set up

In my situation, I find myself looking through emails from the past few days wondering who wanted the quote on the 3x5 flag with a particular image, and alot of subject lines are "Flag", and the names are Morgan, Megan, Chet, Chad, and I can't remember who wanted that particular one so I have to look through several to find it. It would be great if I could add a note to the side of each one labeling them. They should really make that an option...
