Check the bail arm that can be snapped up or down on the input side of the plotter. It should be down. I recall my plotter made that noise a couple of times when the bail got pushed into the up position.
Neither of those versions are available any longer. Your options are to either upgrade to the latest boxed version of Flexi, subscribe to their cloud version or shop around for a used version of 8 or 10 along with a dongle to go with it. Your existing dongle only has value if you upgrade through...

You should also be using a Theta Washer to prevent wear on the lifter fork of the tool head...
No idea on the other text or the initial caps. The image isn't straight on enough or large enough to ID the smaller text. The diamond shaped periods are a dead giveaway on the Goudy part though.
No it isn't. A gap of about 3 inches is normal. You might want to check the Layout dialog settings for X Gap in GSPPlot. Default is .1". If it is set to larger than .1" then it will add that to the end position.
I don't have an Edge FX so I don't have that particular settings screen but I would guess that is how far the the Edge will back up when printing is resumed if it senses that it has run our of foil. It is a very small amount and nothing like the 9" you mentioned.
