What Flexi shows for a color on screen is almost never right.
You may want to invest in a Pantone guide to be safe.
The image below is an example of this.
The top is what you will see on screen in Flexi with the values of:
C:100
M:100
Y:0
K:50
The second image are the same values in any other...

It was more or less a question on who other than SW sell media for a 48" printer.

From my research SW is one of the few supplier to carry media for this machine - so wouldn't one be captive to SW?
Also if I had a 48" machine why would I want to by 30" media? Why not just buy a 30" printer and save a few $$$?

Don't buy any supplies or books listed on the syllabus until you talk to your professor - especially the books. 1/2 of the design classes I took we didn't even use the books. I ended up saving a good amount of $$$
In all why not contact a few merchant members on this site and see if they can help with your needs. It doesn't hurt to make a few calls. You may be surprised what you find.

Stacy is right - you may be able to test out of some of the classes and still get the credits. I did it when I was in school. I still had to pay for the class but it was discounted and I got full credit.
You may even be able to use your experience to bypass any prerequisites...
I may be off on this info but here goes:
1) I would go larger on the printer - 54"
Reason being, you may find not all vendors carry media for the 48" or not all the media you want to use is available in 48"
