I normally tell people to save back to version 8.0, Unless I'm missing something rarely does X3 import all versions of AI up to C3, But rarely have issues if its saved back to Version 8.0.

Not sure which model gateway you have but there new tablets have went to wacom tablets.. so they are much improved over the old versions which from what I hear where as you described, there newer models have been getting much better reviews.

I have cut up to 16m thick on both my gerber envision and my versacamm 540 I do do double passes.. one thing that did help was going from 45 degree blade to 60 degree blade on the versacamm.
