i use one vert and one hortz so i can lay my color swatches and layers out full. Also allows me to design both vert and hortz signs without fighting screen cut-off...
dude not to sound like a downer but i ran one of these for 4+ years and it was good at very limited applications. Like full color banners and some vinyl. Pro's are the ink takes on the media luster so glossy material will make great glossy prints. Con's are headstrikes with the slightest wrinkle...
i also have only found gradient solutions within adobe products... often I have to go to select all, then go to object/expand. If that doesn't work go one step further and select all, then go to object/expand appearance... it'll prompt some options just click ok on the default... should work.

the Vec Doc is right .eps files often get corrupted depending on what happens during conversion... you may need to have it re-sent, and if so ask for native files (less chance for corrupt just make sure its in your current version of CS) since vector art is generally small enough to email...
