I sell signage and signage accessories.
Should we use epoxy adhesive?
Welded/joined Wire mesh w/mortar?
Foam product?

It's going on 2 columns at either end of a existing sign.

This will be installed out in the field? If so I would go with the foam. You can miter all corners and cut to your measurements in the shop and will make it easy to install out in the field with polyurethane adhesive and exterior screws. I mix up paint to match the stone to touch up the mitered corners and screw heads.
