I normally sub out machine routing, This time I'm going to route the letters with jigsaw onto 2" HDU. The letters to have seriffs. Am I up for a challenge, is there concern cutting this material with jigsaw?

No concerns, the stuff cuts like butter. You'll probably have to do some additional finishing to get them ready to paint, but a jigsaw will cut hdu all day long.
I agree about those serif tails, delicate work.
I would think about bonding the HDU to some ACM to help keep them from snapping.
And maybe cut it on some scrap foam insulation board so it's completely supported.
How big is your letters? I would recommend to cut template from 1/8 hardboard with a jigsaw. And when use a hardboard template and hand router with bushing to cut hdu.
