Anybody knows if its possible to swap out the cartriges to eco sol type so that this machine can print on most uncoated media?

The Gerber Jetster is an ecosolvent printer. I doubt you will get good results without Gerber software and their inks and supplies.

Checking the GSP website, it is not listed among their current printers so it has most likely been discontinued.
