I'm still waiting for this to happen to me, but at least now I have hope :)

I had a customer last week coming in to do the same thing, while I was in the middle of 4 police cars and 70 Pole banners for our city among a bunch of jobs.

It's not a huge task list but I'm a 1 man shop.

Any who, this lady came in, with no logo, or idea of what she wanted her artwork to look like. I told her I really don't think I have time when do you need it by? "friday".. I was like I'll put it on my list BUT I will not promise you that I'll get it done. I made up a pretty simple logo/artwork deal. Sold her $75 on logo design, $100 banner sale and she sent a huge radio station my way which just lost their sign shop they had been working with for some time due to shoddy work.

For once, one of those pesky customers came through and did some good!
