1/2" diameter would be minimum. 3/4" - 1" diameter engine turn is optimal. Most of the old-school engine gilders used their thumb with cotton to spin/burnish the gold leaf. Any other size looks gawky or cheap and unrealistic.
I prefer "large" engine turn for most jobs. It looks closest to the hand done size. Small engine turn looks more fake. I've done a few with florentine for a different look.
