We recently aquired a vision pro engraver/router. My question is when cutting dimensional letters what do you use to adhere your substrate to your sacrificial piece. I have been using double sided banner tape but it is near impossible to assure no centers of letters or letters themselves will not come out and cause problems.

yeah a vacuum table will work the best ... other than that, you can cover the side facing the table in standard vinyl mask tape and then banner tape it to the table. You just have to make sure your depths are correctly in order to not cut thru that mask

Use tabs in your CNC software around the shapes and separate them with a knife or chisel after cutting. There is a hold down tape that is removable easily.
Engrave lab by Signlab is excellent.
