I have a Roland SP-540 and Im having a hard time getting a nice burgundy to print out. Curious if anyone has a nice formula either CMYK or RGB. THANKS!

That color can be pretty tough. My go to CMYK values are 70 | 100 | 100 | 10.
Your color profiles will play a large part.

I find that even Roland's versaworks spot colors don't even give me any good burgundy choices.

Burgundy and other deep red saturates benefit greatly from increasing the resolution and number of passes. You lay down more ink and get far better reds than running your printer in low pass production speeds.
