Simple Illustrator Question...so I think???

Ok, I must be a moron. I've never been able to easily convert any text that I "arch" in Illustrator to lines, and have it stay in that same arch when I convert it to outlines. Yes, it stays there, but the lines it creates are in a straight line right where I typed them. I remember fixing several times by like, saving it, and opening a new one, and placing it or something...but does anyone else have a better fix? There HAS to be one!

Drove me loco the first time they introduced that.....

-You can also use expand (and occasionally expand transparency) for outlining strokes, when using the pathfinder tool, vecorizing brush strokes.....

I have FineCut for that. Works pretty slick. Never really knew what it was, but I got it when I bought the printer. I just used it for cutting on the plotter, but didn't realize for a while I could use it in Illustator.
