What is the shortcut for changing text to upper case, lower case title case ect.?

no shortcut ... just go to Text menu > Change Case

You could probably make one, but I've never tried it. It would be under "tools" "customization" "Commands". You'll also see a list of all the preprogrammed commands or short cuts.
You can also use your keyboard commands, <ALT>T, G, U, and enter.

I used to have a print out that had this information including other shortcuts. I got it by following a link from somewhere (I think from here). Just can't find it now.

Backspace till you get where you want and re-type it. Don't forget to hit the 'Caps' key this time.

Also, certain sign programs have that feature built in. ANAgraph and Graphics Advantage will change on the fly from upper to lower and visie-visy.
