Part of keeping the rights to a trademarked logo is defending it against similar logo's, if you don't make this effort you can loose the trademark completely. This is the reason you see these types of legal action. Keeps the lawyers busy.

You might want to check with your current insurance company regarding liability, mine found out I was cutting boat parts with my CNC and dropped me.
Some commercial insurance carriers DO NOT insure anything marine or aircraft related.

Sublimation may not be your best choice for those specific materials. Items that are sublimated must have a high polyester content or coated with polyester for the ink to "Sublimate". Check with Sawgrass to see if they can offer a solution for you.
