EFI's Fiery Color Profiler without Spectro/Dongle will run in doom mode which allows Fiery Profile Inspector to run which may do what you want...

I would guess that all the Macs that are limited by the heat generated from Intel processors will discontinued. All to be replaced by M1 processor versions. And I expect the Mac Pro with the Intel chip will be replaced sometime soon as well.

Open them up on Photoshop and try assigning various profiles to them and see if any come close to what they printed like in your previous unprofiled environment. If you can get them close then you can convert them to Adobe RGB 1998 and edit as necessary.
That is precisely why you should use a named spot color especially when send out a job. That way the printers will know exactly what the should look like. It is up to the printer to match that spot color if they can. If they can't match it because of gamut limitations then they need to convey...
