Always overlap the graphic, don't butt together. Also look into the image1 impact rulers they go up to 96". You can get a cutting head on it so it's perfect cuts every time. It slides down a track on the ruler.

Ummm... Unless these rolls like 2" wide, 600' of large format graphics isn't going to fit into anything and would be too heavy to carry. A standard roll of vinyl is 50 yards (150 feet) so that would equal 4 full rolls and be around 180 to 200 lbs
I would get rid of both of those. I highly recommend a Roland GX-24 if you can afford it, They cost $2,000 new, I see a slightly used one for $1,400. I've had mine for 8 years and nothing had a single problem with it.

I may be upgrading very soon and selling my Roland VP540i it's a 54" print and cut. It's CMYK and has been well taken care of. In the 5 years I've had, only replaced one print head.
Yes smart pens do exist, you can hand draw it. Also why not use a pre-made template? Vehicle outlines exist, they should have them for ATV, dirt bikes, etc

Yeah branding people are insane. Some logos are created in two hours and they charge $2,000 for it for big customers. I do know branding guides take a lot longer, but still overpriced.
