#7 gets my vote..not only because of legibility..but because it puts "Diner" as the main copy.. I also like the stylization on the bottom panel. Yes, #6 fits the mood, but it is a Diner.. ego getting in the way of that layout. Eddie's as the main copy makes you wonder what it is..you have to...

The cleaning fluid can be mailed to you? Mixing two brands of ink..doesn't sound reasonable to me. Get a new magenta eco-sol cart. I've never done it, but apparently, you can draw ink thru the line using a syringe, when it gets to the head ( or close) reconnect the hose. Good luck...Ken...
