I remember pudding. I used it as well back in the day. I could probably find it on an old computer in a closet if I looked hard enough. That was a good program for how simple it was.
Kind of depends what the training is worth to you, but I just sold my JV33-130 w/ matching plotter for $5,000 and it was only 3 years old with all new parts. I don't know if that's a great deal, but it's probably not a horrible.

I think I got mine down to a 2 pass once and it looked like total garbage even for short term way far away prints. If you can get halfway decent from that, you've done well.
C&C Engraving in Scottsdale might be able to do it. I know they do lots of stuff and are a MM here, or were in the past if they aren't right now. Great people to work with.
Got a tech coming Wednesday to install my new 310 and graphtec that's been out in the shop for a week. I'm running the new Onyx, I'm told it'll be amazing. Hope they're all right.
When I was talking to the printer salesmen, they all said for Mimaki's great name in the past, they haven't gotten the flatbed's figured out yet. Sounds like they're not the route to go yet for flatbed.
If it's the same weight and cost, I'd probably go aluminum. Mine are still going strong probably 8 or so years later, but I did bust the corner off of one of my big felt squeegees at some point, probably when it fell over or I laid it down too hard.
I've never ran a Mutoh, but I ran Bordeaux inks for about 5 years on my last machine and liked them. I've run triangle on my new machine right out of the gate and had no issues other than having to tweak profiles a little, and the stink was a little more intense. I've got no regrets running...
