Are you using it as the PS plugin or standalone? If using it in PS try launching the 32bit version of PS and using it from there, that fixes weird plugin issues sometimes.
Haven't used a Mutoh but on our Mimaki we just put a piece of tape over the End of Roll sensor. Try that first, sometimes simple hacks are the best. Otherwise you're probably looking at replacing that sensor or possibly the board it connects to.
I actually like Onyx's interface best but that's probably just user bias. I just wish the layout tool was built into preflight instead of being two separate tools, but I find Caldera to be a worse offender on the "lots of different ugly windows for functions" front. However I know people swear...
RAID is just one level of on-site redundancy and won't help you if your building burns down or floods. You need offsite backup as well.

I can also vouch for Bigfish's Poster Paper, it's great stuff. I've used both it and the HP Photo Realistic Poster Paper, both are excellent products but Bigfish's product is a lot less expensive and equal in quality.
