You will not get any Flexi 8.6-Install files per official downloads anymore, perhaps you are lucky and someone still have some (if you don´t).
But even if you get a download, it is really possible that you run into problems, Flexi 8.5 is around 15 years old.
ColorCheck isn´t a tool to match pantone colors, it is a tool to check color consistency. Pantone colors are difficult to match because they are originally solid colors mixed out of 18 base colors, to reach colors not reproducable on 4C offset printing machines. There are swatches available...
The epson printers are really low maintenance. Just follow the documentation attached with the printer. Epson Edge Print is an easy to use RIP-Software, with no special key features.
I like the i1 Pro 3, the i1iO scan table is cool, but very expensive.

The Z-Series uses pigment inks, it is better than dye inks, but not as good as solvent inks. And pigment inks needing specially coated medias too.
The Z-Series are mainly used for indoor applications on papers, like posters.
The HP T-Series Inks are not made for outdoor prints, they use mostly Dye-Inks which could visibly fade after a few weeks. And they need special coated media to print on.
Do you mean „Ethernet“ or „Internet“? It is no big trouble to set up a RIP-Computer and do ethernet cabling between this and the printer. The printer does not need an Internet connection, while it of course would help to download profiles and so on easily.
The connector inside the printer is VGA, but I have tried to connect a VGA-Display one time for diagnosis (I made service on that machines), it havent worked. In addition there is - of course - a separate connector for touch (looks like 9-Pin-RS 232), no idea how to drive this.
