We had a similar issue with Triangle's black ink. We simply swapped out with the OEM black cartridge and it cleared the nozzles up. Perhaps try Mimaki Cyan and keep running the jet k,y,m. We ran OEM Black, and Triangle CYM for about 3 years until we fully switched to OEM.

You may want to test whichever material you plan on using. Some materials have been known to cause ghosting on the finish of the stainless:

Not sure about Roland Brand, but we used to use aftermarket captops for our Mimaki but found we were replacing them way too often compared to OEM. So we now stick with OEM. However, we do use aftermarket dampers and haven't had any issues (knocking on wood as I type this).
We found our insurance through PIAG (Printing and Imaging Association of Georgia. There is a Florida affiliate, Florida Graphics Alliance. If they provide similar services to PIAG, they should be able to help you find an insurance provider that can cover all of your needs...
