as a quick example, something simple like this would give you the basics:

Change the log location to where you want the log file to be (within your home directory), chmod + x and add the file into cron (easily done via command line or in the control panel... cpanel for instance has a cron interface if available)

before you go with a host check the spam blacklists for the host IP. I was sharing a server with a bad spammer and wondering why my emails were getting eaten by spam filters... because I had the same IP.

yes, but they're not that easy to get. ARIN/RIPE limits IP assignment based on need, and they won't take spam issues as a legit reason... your best bet is a host that monitors blacklists or- to get a host that is a little bendy with the rules.

So how do you tell how many accounts they have sold on a particular server?.....

If you're already on the server (on a shared IP) you can go to http://whois.sc/yourdomainname.com and it will show you how many on that shared IP.

Benefits of a dedicated IP are .... you will need it to do any ecommerce and use a dedicated SSL cert (not a shared one provided by the hosting company) and you have a better chance of not getting an IP that has been abused in the past.

We host for our design clients and I can tell you .. godaddy sucks when using a Wordpress or Joomla site since they oversell their servers.

This is true, and an SSL is a valid justification for a dedicated IP per ARIN/RIPE... An added expense, but may be worth it for you even if you don't plan on having a cart... just for the dedicated IP. Bad news is, even with a dedicated IP, many systems will still use the system's shared IP for outbound smtp.
