Cheap *** utility knives from Lowes. There's at least a half a dozen of them scattered around the shop. 1 or 2 X-acto's for contour stuff.

I love my Kobalt folding utility knife with the side belt clip(not the carabiner clip on the heal) for general cutting and then I use an Exacto for the precision stuff.

kobalt folding knife (one side is a standard blade, the other is a boxcutter) and a thick contour-grip x-acto are on me at all times while doing sign work... never had a need for anything else and for whatever reason, never got into breakaway knives.
