This is exactly what we do, with paper backed/plastic backed/optically clear or any laminate. Never have an issue.
As long as you know how to properly set the tension on your laminator, they should all behave the same.
I wouldn't be replacing anything for free. The customer ordered and approved a sign, you provided a sign. If you're really determined to make them happy (which sounds like they'll never be) offer to take the signs back and mount prints to the backside at cost.

For problem #2 - did the customer pay for the sign already? If so, let them walk. Customers don't get to dictate/dispute how signs are made after the fact and after they signed off on jobs.

Up to 80% seems crazy.....personally I find as close to 50% humidity as possible is best. If your vinyl is getting wavy, high humidity will likely be the cause...

Figure out whatever materials you're thinking of using, then multiply by your markup (2.5 here) then factor in all your overhead and labor etc...
To determine for sure if the vehicle has been coated. As far as I know there are no vinyls designed to stick to ceramic coatings. By nature they are designed to prevent anything from sticking to them.
Then again I'm no ceramic coating expert.... :peace!:
