All I have found is sheets for offset printing, up to like 26" by 40". I have been playing around with them on my UV printer and running them as "rigid".

That seems odd that the table would make the readings off since it's still using the i1 pro2 to get the color information. The table is just an automation device.
The tech I had come help me said that most people use too many patches, which actually can make your profile worse! It is unnecessary and can lead to more errors and miscalculation of colors. He said that unless you have a high end print with the extra colors, don't do the highest number of patches.
I alway run my on standard vacuum. You might want to try a lower vacuum. For the tension, there is a lever on the backside of the printer that goes up and down. For roll, I have it down (more tension), and for rigid I have it up (less tension). You will definitely want it up for coro, cardboard...
How old is it?
Have you cleaned the bed off? Just turn the blower on, then take another shop vac with a bristle attachment and go over it good. The bed getting clogged would be the only thing I could think of.
You get the ink directly from Fuji. From what I was told, they don't use a long shelf life. They like to make sure their ink is fresh and don't recommend stocking a bunch unless you are going to use it soon.
I run mine in about a 1500 sq foot spot without ventilation and the smell isn't bad at all. If you are running some heavy stuff, you will notice it. Yes, uncured UV ink isn't good to get on you. haha
