When you type out your text, do you drag a text box? By software default, there is a bounding box, I prefer not to have it on... do have you bounding box on? If it's a text box, it's an easy fix, copy your text… deselect, then paste... the only issue after that is the bounding box.

I've mis-clicked on my phone a few times... Does your state have special requirements for fire rating... in California, we have OSHPD. They can be fickle about fire rating and percentages of materials on the wall...

As an observation, you have been on Signs101 for 9 years, what have you been using the whole time? Do you design more than signs? Are you self taught in design software? If it's Signlab, and you have not learned it yet, I would think any software where you can get online or classroom...

I can give you hundreds of suggestions but: What are they called? Some typefaces look better than others depending on what the name is (I know, you probably don't want to reveal that) If you are going to have the name AND list services, you might want a typeface with a lot of weights...

All the sign shops I worked at had a minimum charge... and most of the shops, only regular customers were charged time and materials, walk-ins were charged the minimum... some were as high as $75.00

Most "higher class" ADA signs are designed by a qualified designer... Don't know if there is such a thing as a high class stock sign but you might also try Takeform. They have some great stock sign solutions and I believe design as well. http://www.takeform.net
