I've done what you describe on a small scale. Motorcycle tank/fender graphics that get printed then "buried" in automotive clear coat. No reported issues.
What is the timeline to have graphics on the fleet? If you have 4 to 6 weeks you could do 2 large test panels and fix one to the shop...

QFT!!! I wouldn't even think about doing this job in house under any circumstances. My sub runs 2 HP Scitex at 3000 square feet per hour, do the math. On large jobs I pay less for the completed job than I have in materials, plus no headaches.
Hear me now believe me later. Buy whatever brand of printer from the shop closest to yours. Make sure they have qualified techs also. I don't care what brand or what others claim regarding reliability, everything breaks and usually at the worst possible time. Parts and service are 40 minutes...
Since you already have a L25500 maybe find a used unit. You apparently like what you have, know how to run it and have working profiles. Why reinvent the wheel? And worse case you cannibalize one to keep the other going. Redundancy is a good thing.
If you read the details(which are very spare) they are alluding to it being a light duty rig. I would however have no problem using that platform to run a plasma cutter. Should work very well. Belt set-ups are great for things that do not "load" the belts/drives.

We have a SP540V also. You will need a beast of a UPS since the draw when printing is around 10 amps. It will require a commercial unit to meet the draw for even a few minutes. I wanted one, but when I saw the price the want stopped.
If it is short run screen jobs would it be possible to print directly? I've seen people use flat beds to print on everything from shirts and old barn boards to door mats. If it fits under the carriage they print it. Durability would be the question.
Another thing, at least with our tech college, is the instructors will tell you straight up who is worthwhile. Ya know the ones that show up for class everyday, stay the full class time, do their assignments, don't text in class etc...
Dry with small overlapping squeegee strokes. I've done large double layer graphics on glass like that, but it takes some time. Key is to lay down 1/8" to 1/4" of material at a time.
