If they are anything like the ones on my colorspan, they just need to be taken apart and cleaned up and lubed. The ones on the rolls that don't get changed daily tend to get gummed up sooner than the others.

is the choke/spread created in composer? I had a problem with it doing that because it was printing two passes of the spread color instead of all at once. You may try switching the print order so the color is on top of the black, and the black is printing in one pass..

What are the CMYK values for your black? Your profile might be making some weird rich black color that looks fine on white substrates but turns to doo doo. 20/20/20/100 should yield an opaque black on that machine.
Can you post a picture of what it's doing?
We laminate UV inks all the time with our cold laminator, never have any problems so it's not a must. The rollers are silicon and apply the laminate fine despite any variation on the surface. Running it slowly probably helps that.
