Exactly this, a roll cutter is designed to kiss cut but can do a flex cut.
A flatbed is literally made for the application you need. That is the right tool for this job.
And never being able to get a single barcode to read? A lot of this sounds like user error to me

Yeah as far as I’m aware there’s not much to these machines. There’s the head, main board and forward and back motors with built in encoders as far as I’m aware.

How much are the aftermarket inks saving you on this thing? Even with the right inks, the ink costs per unit are about £0.07 (UK) per mug. Our mugs start at £10 (get cheaper through bulk buying) but that’s still absolutely nothing compared to the finished price.
Have you looked at the cut file for that job? Are there excess points in the letters?
One the blade depth is waaay too high. You should barely see any mark on the backing paper
Two, that cut looks almost jaggy. Like the blade is moving a lot more than it should for simple curves.
Pretty much exactly as above. Open the media manager (RL has to be closed). Export the profile(s) you want.
