I had similar issues with a printer where the core would just spin around the spindle and wasn't actaully being held in place. We ended up putting rubber bands around the spindle in a few areas to give it more friction on the inside of the core. Some mfg.s just have smaller or larger cores.

I would second the screen print. Many of these type of stickers are done in sheets. Screen print the sheets. Cut and weed. And then to a table and a doming machine. Doming machine is usually setup to do multiple stickers on a sheet at the same time.

Do you run a lot of different things at once. Then the 5820 if you run less process you can probably go with the 6700. Either is a good choice. 5820 will handle multiple things faster. Is the whole computer going to be liquid cooled or only the hard drive?
