If you only do a lot of sheeting to sublstrates and not a lot of laminating prints only. Try a desert laminator. This is the best thing besides a rolls roller for making sheeted flat panel signs.
Or you could by a micrometer like this. Get a digi one and you don't even have to count the lines.

In my opinion without a metallic set of inks gold, silver, and polished aluminum are colors your not going to get, no matter what you do. What about printing the graphics and layering the gold overtop?
There is another method. Just can't think of what it's called. You use foil and laminate the toner print to the foil and then the foil peals from the areas where there is no toner. You just have to make layers for each color.
There is more then one way to skin a deer. Multiple lines in the same spot will give you multiple cuts in the same spot even if your plotter doesn't support it automatically.
