We have a couple homebuilt configurations on our tables, pretty similar in nature to each other, attached is one. Just some 2x4's & secured dowl rods will do the trick quite well. I would not use the upper roll (it just hold more material for easy swapping) and do not prefer the middle roll, but use it just fine when I'm too lazy to swap the material down to the lowest level.
When you're masking something longer than the table (ours is 12') let the extra hang off below the rolls & mask what's on the table, then pull that area forward & mask the rest that's now on the table.
