Our shop is looking to upgrade our Oce Arizona 480 and I'm debating between the HP Latex R1000 vs Vanguard vk300d. We are not a production shop. We care about being able to hit Pantone colors as best as possible and no banding. Does anyone have experience with both of these machines?

HP has a automatic drop detector for defect nozzle replacement. Vanguard doesn't even have a manual way to do that. As long as there are no missing nozzles, it prints nice. But with degrading heads you will get banding.
HP has a unique way of handling white with not much user intervention, where Vanguard's white is a nightmare.
