Why don't you get book an appointment with an EFI dealer or get a virtual demo?
If you're that serious in a printer, most people would get samples, book a demo or a virtual demo (covid or it's to far)

We had an issue with our 480XT table lifting in the middle (out of service) and they did fix it as it was found as a fault and there was a fix for it.
Hopefully canon do get on top of that.

It's basically a 1650 that has all the featured turned off. (possibly 4 heads) Makes sense for a cheaper entry VS HP latex.

As powerful as the M1 chip may be, it's still technically a "mobile" chip and would not use a mac mini for a workstation.

+1 on using onyx as you've got it.
Onyx doesn't need much to run a basic printer setup.
6-8 core CPU
8-16gb ram
512-1tb storage
a graphics card (any) doesn't matter much for onyx.
Onyx does PMS colours very well.
Also helps having a good profile to start with.

Sometimes it takes trial and error to implement a system. we've tried a few, we change things up to improve workflow.
IMO id go with the Arizona 2380 with the 2x CM channels for extra production speeds. unless you can get the 2360 with 2x CM with no white.
so you'd have 2 the same printers, which makes things easier.

We print on phototex. not the cheapest stuff, but put it though the colorado in matte and it looks beautiful.

Most people would use something like a CRM. which literally outlines everything you want. without the forum bloat.
Some use dedicated software like shopvox or similar.
The bigger shops will have a CRM and or a MIS...
Yeah you can do this in almost any CRM with comments etc. We use comments to keep notes all the time on custom work. Comments work like normal text conversations. mobile notifications, email notifications.
