I run a 1640 Colorado and we cold laminate the prints. Standard lam is fine but you do get some haloing around small text elements but it's still perfectly readable, a heat-assisted laminator is supposed to fix this issue.

I would try running Illy in Compatibility mode if you're on Windows 10. Just right-click the Illustrator icon and under 'Preferences' look for a compatibility tab and set it to Windows 7. Running older software on a current OS is asking for trouble.

Grimco sells them in various sizes and they are pretty decent quality and seem to hold up well. A 4' x 8' will run you a couple hundred bucks.
