Update: Tried new cable, no change. Rebooted network switch, no change. Checked TC/IP settings - IP address was different than what is on the printer. Updated that, no change. I'm at a loss here. I don't get how it can be communicating great every day then a simple reboot ruins everything!

Maybe an XY cutter? https://www.fotoba.com/ They're not cheap but they would automate the process for you. Otherwise the ol' classic trimming by hand does the trick.

Some of what you mentioned is a bit above my head, but I do know for sure the inks drastically change color on the UCJV. We spent a full day creating profiles on ours, and the tech didn't take that into account. If you compare a swatch printed right off the printer with a swatch from the day...

Realistically it will probably fail even faster than regular perf does due to all the exposed edges. Shape cutting perf (even basic, big shapes) doesn't really go that well either. Personally, I'd discourage the idea and either just go with regular cut vinyl or full perf.
