Comparing the print size to the bombsight target, it's not that wide. My money's on an Edge, you can even kind of see the 600 dpi printed inside the target and those are definitely Gerber/Edge print notes and target.
If you would have left out the part about cutting out a sign shop to do your own signs in house....you probably would've received a lot of help.

Agreed. I've always found nesting/batching jobs in RIP Queue to be a painful and slow process. Only once it goes through the stages of processing/RIPing then you can see that you're using more sheets than you should, and it's back to the drawing board!
They both have their place and we use both methods daily depending on the circumstances.
UV - Better for coroplast, sintra, styrene signs. (Aka either indoor or temporary signage)
