You literally, just pry the old ones off and snap the new ones on. They're just rubber.
Once there off, it's a good time to clean up the area in general.
If you're learning Illustrator, now's the time to jump in with both feet with your new iMac.
You still have Corel on your windows box so what do you have to loose? You can network them also and open your corel files in Illustrator also if you need to.
Just to extend Fred's answer a bit. The adhesive on transfer tape is far stronger than the "static" attraction of the material. If you transfer tape it, you won't be able to remove the tape without the static lifting up with it.
Have you tried HP's cleaning/soaking pads? Head Cleaning Kit Q6665-60089 Rev A
The pad is lightly satruated with cleaning solution and than jammed against the print
head overnight. I've had very good luck just using it occasionally when needed. Give Advantage Sign Supply a call.
Graphtec's own Cuttng Master will cut directly from Illustrator or Corel Draw. It's all I use for straight vinyl and also digital print cutting. Best of all, it's FREE.

That's where they are on my G4, OS 10.4.11
I never tried installing Illy 10 on my MacPro. This could be interesting, keep us informed on their progress.
It's been years but we've screenprinted a foam board called Artcore I think. It had a very thin plastic surface and we did a prototype run for Mott's apple juice which was shaped as an apple tree of course.
This was die cut after printing and had a beautiful soft pollowed edge after die...
