I do agree that many newb questions have been answered and are in the archives here. Possibly there could be a way to point this out to newbs and maybe could be their first homework assignment when joining the forum.

Very good point...many here forget this site is called SIGNS 101 which one would assume a beginner would be perfectly in his/her right to ask a "newb" questions.
Price of a sign is more than your material cost + labor. Unless you don't consider your building expenses, fuel, electricity, etc. It's usually material ( + markup anyway )and all the other factors. Then when you think you've got the right figure, round it up.....
Do they still grow corn in Nebraska ? I was surprised when I went back to the midwest after years of being away that more people are growing soy. I also noticed how they terrace the farm land. It looked different than as I remembered going out to the farm as a child. ( 50'5 & 60's ).
If you're just starting and are not printing, just cutting, why do you need such a large plotter ? Maybe you are doing print, but why not go with a 24" or a 30", ?
I would definitely use a pounce pattern, but it's not called a stencil. That's where you kept throwing me off. And still I would draw out your design with your cutter using the pen on butcher paper, then pounce by hand with a pounce wheel. Then transfer your pattern to the wall .
