Find a local shop with an industrial laser. Sheet metal shop is a good place to start. Then you can have stencils cut from stainless steel. I get odd things lasered at a local shop and they are inexpensive. I tell them to nest and run it with another job or use a drop.

Electrical perhaps? If he does well he should be certified by the end of his apprenticeship. You can train him all other aspects of your sign business while he's in school. Now you have a licensed electrician in your shop that can do signs.
If it doesn't work out he will have a solid trade...
Personally I would hook it up and run the wee out of it. Complex cuts with fine detail, long plots etc... If the seller won't let you do that run away.
Wonder if I can run it in my SP540V? Only says current printers, but I can't imagine the ink train is that different. Of course if it was compatible what would that do to colors/profiles?

Whenever questions regarding flatbed reliability issues are posted I read them with great interest. I will never own a flatbed yet wonder where the real issues lie.
From the outside flatbeds look pretty dog gone simple, and shouldn't have any major issues, yet you hear the horror stories...

Odd comment about hating your shop. I don't. You are quite fortunate to have those type of workers.
